Burgundy, Marsannay

Bernard Bouvier is a very dynamic figure currently at the helm of this family estate. He is very much responsible for how the wines coming from here today taste. He took over management of the estate in 1992 and successively: expanded the estate's cultivated area to 30 hectares, built a new winery and switched to organic farming. He also began experimenting with fermenting full bunches and today they make up about 60% of the must.
Vinification is gentle, with little sulfur and a low percentage of new oak in the maturation. This usually takes a year, followed by a second slumber in larger tanks.
The producer is famous for its great wines from Cote de Nuits, but also Marsannay in both colors.
